It
probably doesn't get more exciting or intense, than when
you're twelve years old
and the literal "chef, cook, and bottle washer" in your six
person
family. Doing it right started early for me in my
hometown of San Fernando, Trinidad. There was not much room for error
cooking breakfast lunch and dinner for my loving family with
their set, discriminating tastes. You
didn't burn, scorch or over/under cook anything without hearing about
it for a week! Forget putting too much salt
in the food, or worse, letting the "green" (Scotch Bonnet) pepper "burst" in the Callaloo!
(Once
I experimented with bird peppers from
our backyard, and let them burst! Honey please....that is a
story for
another day!)
I handled it though!
...Traditional Trinidadian spreads with two meats,
two starches, three or four & vegetables, and a salad
or two on Sundays......soup, pelau, saltfish and ground
provisions, souse, or chicken&chips on Saturdays...
...stews, curries, seafood or sandwiches, come weekdays!
I
became professional chef in 1987 and I've had the
best times in kitchens all over the country.
